More people are aware that choosing a good cooking pan matters. Its not about how much money you have, or how sleek its design is, its about the knowledge you have in choosing them. Companies will now tell you their products are made with the latest technology and how expensive it is. The only thing I would choose from is there is no coating of any kind. Iron is the safest choice. While coating without forever chemicals do not guarantee the polymers used in the coating are not safe, even when its claimed to be. These chemicals are new, it takes time to verify. On the other hand the metals of cooking is also a key factor of risk. The worst is aluminium, it us proven beyond any doubt that its linked to brain damage. The metal I choose is always iron first, no coating, cast iron is heavy, but Japanese iron is light. I would also choose stainless steel with assurance that the steel is of high quality. Iron can be verified by a magnet attracted to it, steel can be tested by specific tester droplets.
